The addition of lemon juice during the cooking of the soup is aimed at preventing the rice from becoming mushy. For this reason, lemon juice should be added first, followed by the soaked rice. If rice is added before lemon juice, it will disintegrate in the soup, which is considered an undesirable appearance and a production error. 3. After adding the rice to the soup, the pot lid should not be closed to prevent the rice from becoming mushy. These steps are crucial for maintaining the individual texture of the rice in the soup.
