Product Description and Distinguishing Features:

Amasya Yağlısı (Amasya Oil Pastry) is a baked pastry made with a dough prepared from wheat flour, water, salt, and dry yeast. It is distinguished by its layered appearance, achieved by placing a filling made of sunflower oil, walnuts, and poppy seeds between the layers of dough, and then cooking it on a griddle. It can also be produced without yeast, in which case sunflower oil is used in the dough instead. Amasya Yağlısı typically has a circular shape with a diameter of approximately 40 cm.

Amasya Oil

The history of Amasya Yağlısı dates back to ancient times. It is traditionally served on special occasions such as weddings, circumcision ceremonies, holidays, and funerals. It holds significant importance in the culinary culture of the Amasya province, contributing to its cultural identity. Therefore, it is associated with geographical boundaries and renowned for its connection to special events and ceremonies.

Preparation:

Wheat flour, dry yeast, and salt are mixed in a bowl. Water is gradually added, and the mixture is kneaded until a soft, non-sticky dough is obtained. The dough is divided into 2 pieces. The tops of the dough pieces are covered with a food-safe damp cloth, and they are allowed to rest for 10 minutes.

In a separate bowl, walnuts, poppy seeds crushed according to the technique, and sunflower oil are mixed until a homogeneous mixture is obtained, creating the filling. The rested dough pieces are rolled out with a rolling pin, and after brushing them with 200 ml of sunflower oil, the filling is spread over the dough, leaving no gaps. The rolled dough is then shaped into a rose by turning it around itself.

After shaping the dough into a rose, it is allowed to rest for 5 minutes. It is then rolled out to approximately 40 cm in diameter using a rolling pin. The rolled-out dough is baked on a griddle pre-greased with 15 ml of sunflower oil at 200 °C for 7 minutes.

If Amasya Yağlısı is to be produced without yeast, the other production steps remain the same, but instead of yeast, 200 ml of sunflower oil is added to the dough.Amasya Yağlısı, sold in packaging suitable for contact with food, can be stored in the freezer for up to 1 month.
