Beydağ Simit Wrap; is a bakery product produced in the Beydağ district by shaping dough made from special-purpose wheat flour, yeast, salt, and water into a ring, then baking it in the oven. After baking, it is wrapped in lavash prepared with special-purpose wheat flour, water, and salt, cooked on a griddle with sunflower or corn oil. Due to its resemblance to a ring-shaped bread and being wrapped like a wrap, it is called "simit dürüm." It is served hot.

Production Method:

The components and production stages required to produce approximately 50-55 Beydağ Simit Wraps are provided below. Ingredients for Simit Dough: - 4 g salt - 200 ml water - 1200 g special-purpose wheat flour - 42 g fresh yeast Ingredients for Lavash Dough: - 1200 g special-purpose wheat flour - 4 g salt - 200 ml water - 100 ml sunflower oil - 100 ml corn oil

Mix flour, water, yeast, and salt, knead for 30 minutes, and let the dough rest for 30 minutes for fermentation. After fermentation, cut the dough into 30-35 g pieces, roll them by hand into cylinders with a diameter of 10-12 cm, and shape them into rings. After resting for 30 minutes, bake the dough in a preheated oven at 180°C until the top turns golden brown, which takes about 20-30 minutes.

Knead flour, salt, and water for 15-20 minutes, divide into 25-30 g pieces, and roll each dough piece with a rolling pin to create lavash sheets with a diameter of 15-20 cm. Cook the sheets on a griddle with sunflower oil or corn oil for 2-3 minutes.Place the simit in the middle of the lavash, fold the lavash over the simit, and wrap it. Beydağ Simit Wrap is served hot and should be consumed on the day it is made.
